When I found out that Disney Pixar COCO was hitting theaters this November, I was super excited. Not only does the film incorporate Hispanic heritage, which is dear to my heart but we also get to experience a magical journey for the passion of both, music and family. These empanadas are made out of inspiration for the film, what brings my family together is food and music! I hope you enjoy these as much as my family did, they are great treats for birthdays parties, or since we are in October a Halloween party!

1 Can of Zesty diced tomatoes chili mix
Once you mixed your meat and you canned zesty tomatoes or fresh ingredients, put the mixture in a medium sized pan on medium temperature for about 20 mins. While the meat is cooking you can make your circles in the pie crust using a small bowl, you will need to make two circles for each empanada. Once the meat it cooked grab a tablespoon and scoop up the meat and fill the middle of your circle. Then place the other part of the pie crust on top, slowly form your sugar skull with your hands, I suggest printing out a picture to have an idea of the design you want. Once you are done forming your skull use the toothpick to create the designs you want and put in the olives for the eyes, then put the egg wash over the skull to define the artwork. Make sure your heat your oven at 350 degrees and let the empanadas cook for about 10 to 12 mins, once done let the empanadas cool down. Use the ketchup to define your artwork and once done place in the oven for another 2 mins so that the ketchup cooks into the lines, next place on your favorite party platter and decorate!

Disney Pixar Coco Inspired Sugar Skull Empanadas
- Ingredients:
- 1 pound lean ground Turkey or meat of choice
- 1 can of zesty chili diced tomatoes or fresh ingredients
- 1 box of pie crust
- A Toothpick
- 2 Small black olives
- 1 Egg for Egg wash
- A teaspoon of ketchup
- Mix the following thoroughly in a bowl:
- pound lean ground Turkey
- Can of Zesty diced tomatoes chili mix
- Use a separate bowl to mix your egg for egg wash
