Egg rolls for breakfast? You bet! I’m a HUGE fan of this tasty breakfast recipe! Not only are these Breakfast Egg Rolls packed full of your traditional breakfast foods but they’re so much fun to wake up to and eat as well.
Anytime I can create something that gets good food in the tummy of my family it’s a recipe that I’m going to make over and over again.
We love having these on the weekends and they’re great for a wonderful breakfast before school!

Breakfast Egg Rolls
Egg rolls are good at any time of day but when you get to have them for breakfast, it really does feel like a treat!
Each one of these egg rolls is packed full of tasty breakfast ingredients and are actually a lot of fun to make!
Ingredients needed to make Breakfast Egg Rolls
- 4 eggs
- 6 breakfast sausages
- 1 cup of cheese
- 1 pepper
- 1 onion
- 1 clove of garlic
- 12 egg roll wrappers
- 1 egg beaten
How to make Egg Rolls for Breakfast
Cook Breakfast Sausages. Once cooked mince. Set aside in a bowl
Sautee peppers and onions with one minced clove of garlic
Add in eggs and scramble
Add the egg and vegetable mix to the bowl with the sausages and mix in 1 cup of cheese. You should now have a cheesy mix that mostly stays together.
Taking one wrapper at a time, place 2 tablespoons of the mix on the wrapper.

Wrap folding the sides and then roll. Seal with a bit of egg.

Place wrapped egg rolls into the air fryer for 7 minutes at 350 until golden brown.

Once they’re done, remove and enjoy!

How do you know when the eggs rolls are done?
You’re really going to have to keep an eye on them. The key is to let them get to a golden brown coloring without burning. Once they get to that point, they should be good to pull and enjoy.
Can you make these ahead of time and cook later?
You sure can! If you’re wanting to meal prep the night before and cook them fresh in the morning, just make up the filling and wrap them up the night before. That way when you wake up in the morning you just have to toss them in the air fryer and cook.
Can you add in other ingredients to this egg roll?
Sure! If you want to add in other veggies or other breakfast ingredients, you can. Just be certain that you’re adding items that are already cooked are can be eaten raw, like veggies, and you should be good to go!
