Celebrating diversity around the dinner table
Since I have a Hispanic background, celebrating diversity is extremely important to me. And I love knowing that my husband and I are doing everything that we can to raise our boys in an environment at home that promotes diversity, positivity, and love.
We talk about different cultures a lot in our daily lives, and I love being able to use those conversations and pair them up with something else that we love to do in our house, which is eating.
Being culturally diverse means that we appreciate and love all various types of cultures, and that includes food, too!
And there’s no better way to enjoy each other’s company than by sitting around the dinner table; with a ton of delicious food sitting around as well.
It’s time to start thinking outside the box of what you’re used to eating and creating at home and make up something new for everyone to share.

Recipe
Stuffed Hojaldre with Oaxaca cheese
Ingredients
For Hojaldre
1 3/4 cups of flour
1 cup of water
1 teaspoon sugar
1 teaspoon salt
1 teaspoon baking powder
1 egg
1 slab of Oaxaca Cheese from Rizo Bros
I bottle of Ortega Taco sauce for topping
Directions
1. Mix your flour egg, sugar, salt, and baking powder in a bowl.
2. Slowly fold in the water mixing all of your ingredients with a wooden spoon
if you have one.
3. Once mixed on your counter, throw some flour on the top so you can start
kneading your dough.
4. Knead the dough and keep adding flour until your dough is soft and has an
elastic consistency.
5. Once done, put it in a bowl and cover it with plastic wrap overnight. Don’t
place in the fridge.
Stuffed Hojaldre
1.Once your dough has risen overnight, take a small portion and roll it in a ball
and stretch it out enough to make a circle. You will need two.
2. In a frying pan, heat up some oil to fry the dough on both sides.
3. On one of the pieces of dough, place your Oaxaca cheese, then place the
other dough on top.
4. Fry with the cheese in the middle for 2 minutes until golden brown.
5. Serve and top with Ortega taco sauce!
