Kale and Cheese Muffins with Butter Potato “Icing”
The kids are going to be so confused when you call them to dinner and have these tasty “treats” waiting for them. While they look like dessert and yummy cupcakes, don’t tell them any different until after they take a bite.
Let their eyes think that they’re eating dessert first and have their taste buds bring them back to reality. The good news is that this combination for dinner is certain to be a hit!
Ingredients needed for this Kale and Cheese Muffins
- 2 cups of all purpose flour
- 2 tsp baking powder
- 1 tsp baking soda
- ½ tsp garlic powder
- ½ cup of melted butter
- 3 large eggs
- ½ cup of plain yogurt
- ¼ cup of milk (or milk alternative)
- ½ cup of frozen or fresh chopped kale
- ½ cup of shredded cheese (any kind)
Potato “Icing”
- 2 cups of cooked potatoes
- ¼ cup of milk
- 1/3 cup of melted butter
- Salt to taste
- ¼ cup of very finely chopped kale
How to make easy dinner muffins
Mix all wet ingredients together until well incorporated
Mix dry ingredients in a bowl and whisk to combine
Mix dry ingredients with wet until they are well combined
Add kale and cheese and fold in
Scoop into muffin tins and place in a 375-degree oven for 20 minutes or until tops and just golden
While muffins are cooking, cut potatoes and boil on high until soft
Remove from heat, drain water, and mash with butter and milk until very smooth. You don’t want any lumps. Fold in kale. Make sure your kale is very well chopped or it will clog up the piping bag.
Remove muffins from the oven and allow to cool
Place mashed potatoes into a piping bag with a star tip, or your choice of tip. Pipe mashed potatoes onto the muffins
